Beetroot Tart Tatin

Made this from Hugh Fearnley-Whittingstall's Veg Book. Had to roll out some puff pasty, roast some beetroot, and cook it up with some oil, butter, sugar, salt and vinegar. Dressed with shallot, parsley, oil, vinegar, salt, sugar, mustard, and a bit of nice goat's cheese.
