Wholemeal Bread

Used Waitrose Organic Wholemeal Flour, 500:350:5:10. Mix, autolyse, add warm water, knead, 3 hour rise, shape, proved 25 minutes, baked in steamed oven for approximately 40 minutes until done.
Looked and tasted great, hard crust and soft and airy center with evenly spaced smallish (3mm?) air bubbles. I'll let Crampton himself write about his experience in the comment section. Here's a photo of him.
